Where can I go for a real memorable 3 weeks holiday to savour good food, clean air, beautiful scenery,etc?

Been to London, Edinburgh, New Zealand, Alice Springs,Thailand, Taiwan already. Would like to experience some cool weather, farm- life, unique food other than rice, noodles, fish and chips, beef, mutton, and pick up a language
that’s as useful as English.

I’m from Oregon but sounds like you need to come to Portland. We have some of the best seafood in the world. And dare I say it THE BEST beer in the world. We have a 10,000 foot mt one hour away and you can ski till Sept., also a beach less than a hour away were you can buy Clams, salmon tuna right of the boat. I know it’s not as glamorous as Thailand, and only speaks English but it’s wonderful place
